Recipe: Zingy Apple Coleslaw

Zingy Apple Coleslaw

Serves 4


* ½ cup store-bought Vegenaise or low-fat mayonnaise
* 1 tablespoon red wine vinegar
* 1 packet (3.5 g) Truvia  (love this stuff for ZERO calorie NATURAL sweetening)
* 1 teaspoon celery seeds
* 2 cups shredded coleslaw pre-mix (or you can chop up some red / green cabbage and carrots)
* ½ bunch scallions (green and white parts), sliced thin on the diagonal
* 1 large sweet Honey Crisp apple (or any sweet apple you like), grated with its skin
* Salt and freshly ground black pepper


In a large bowl, whisk the mayonnaise, vinegar, sweetener, and celery seeds together. Add the coleslaw mix, scallions, and grated apple. Season with salt and pepper to taste. Toss to thoroughly combine the ingredients. Chill, covered, until cold, about 2 hours.


I sometimes add a little extra vinegar or truvia (to my taste) – I like a bit of a ZING in this salad.

You can add other raw vegetables if you like – a friend of mine likes to add fresh broccoli

I sometimes add extra apple (I like Fuji and honey crisp apples – so use your favorite) or less scallions depending on what I feel like.

  • its very delicious!
  • makes great leftovers
  • great to snack on
  • kids like it
  • tastes great on top of bean burgers!

Yum! Add some diced celery for added fiber without adding calories and a handful of sliced almonds for some added protein. Great recipe!
